The variety is called “violin squash” because of its elongated shape. Once opened, with the seeds and filaments removed, it is coarsely cut into pieces and undergoes the usual method for making preserves. An excellent product for preparing pies and as an accompaniment to aged goat’s milk and sheep’s milk cheeses.
